Made in Georgia, this aromatic blend brings the tart note of sumac together with onion, garlic, ginger, ground coriander and blue fenugreek. Chilli and black pepper add warmth and depth. It is just as useful for a weekday roast or rich sauce as it is for a weekend barbecue.

From the oven to the grill

Before roasting: rub a little into the meat and allow the flavours to settle. In a marinade: combine the seasoning with a base of your choice and adjust the amount to the cut you are preparing. On the grill: use it for skewers or pieces of meat. In a pan: add a little to a stew or sauce, then taste before using more.

It is worth trying with beans or roasted vegetables, too. Iodised salt is the first ingredient, so add the blend gradually rather than salting the dish automatically.
